  17. Pimienta negra recién molida

  1. Poner a hidratar la soja con el caldo de verduras
  2. En una cazuela con agua y sal ponemos a cocer las patatas hasta que estén blandas, unos 25-30 minutos según tamaño
  3. Mientras, picamos muy pequeños la cebolla, el puerro y el jengibre
  4. Ponemos 30 gramos de mantequilla en una sartén a fuego suave y cuando se derrita ponemos la cebolla, el puerro y el jengibre. Pochamos a fuego suave
  5. Cuando estén blandos añadimos el concentrado de tomate, el tomate frito, la salsa Worcestershire y el vino tinto. Dejamos a fuego suave unos minutos para que evapore el alcohol
  6. Añadimos la harina y mezclamos bien, dejamos unos minutos
  7. Añadimos entonces la soja escurrida, la calabaza en cubos pequeños y los guisantes. Salpimentamos y mezclamos bien 2-3 minutos
  8. Ponemos en una fuente apta para el horno bien extendido, dejamos templar y metemos en nevera 1 hora
  9. Cuando estén las patatas las escurrimos y dejamos templar
  10. Sin quemarnos, las pelamos y las ponemos en un bol, las aplastamos bien con un tenedor
  11. Añadimos los 35 gramos de mantequilla restantes, la bebida de almendras tibia, nuez moscada, sal y pimienta negra recién molida
  12. Mezclamos bien y reservamos
  13. Precalentamos el horno a 200º calor arriba y abajo
  14. Sobre el relleno extendemos el puré de patata. Añadimos unas ramitas de tomillo y metemos al horno unos 30 minutos. Sacamos y dejamos reposar unos minutos antes de servir
  15. Servir caliente recién hecho
