  2. 1/2 cebolla de figueras
  3. 1 ajo grande o 2 pequeños
  4. 1 ramita Tomillo y
  5. 1 poco guindilla
  6. Aceite de oliva
  7. 1 trozo pimiento rojo
  8. 2 patatas medianas
  9. 1 trozo calabaza
  10. 1 tomate de ensalada
  11. Salsa de tomate
  12. Caldo de verduras
  13. Agua
  14. Sal y pimienta
  15. Canela
  16. Para la picada:
  17. 1 ajo
  18. sal
  19. 6 o 8 almendras
  20. 1 galleta tipo maría
  21. 1/2 onza chocolate negro

  1. Primero freímos la carne a fuego medio/fuerte en aceite de oliva y la reservamos en un plato. Ponemos una olla con agua a hervir. En una paellera y con el mismo aceite rehogar la cebolla cortada en juliana, ajo picado, un poco de guindilla y tomillo espolvoreado. Cortamos en dados la calabaza (se puede sustituir por zanahoria), la patata y el tomate. Cuando la cebolla esté medio hecha añadir la calabaza y patata y freír unos minutos, añadir el tomate y freír.
  2. Una vez esté dorado, poner puré o salsa de tomate, sofreír 2 o 3 minutos, añadir pimienta y canela en polvo, una rama de tomillo y rectificar de sal. Añadir el caldo y remover, cubrir con agua hirviendo o muy caliente y dejar cocer a fuego medio/fuerte tapado unos 20 minutos.
  3. Preparamos la picada, en un mortero picamos el ajo con sal, después las almendras, una galleta y ½ onza de chocolate, añadimos 3 o 4 cucharadas del caldo de la paellera y removemos hasta conseguir una pasta. Después de los 20 minutos de cocción ponemos la picada en la paellera con las albóndigas y mezclamos, cocer 10 minutos más, tapado. Probamos de sal.
  4. Una vez finalizado el tiempo, removemos que no se pegue pues la salsa se habrá espesado y retirar del fuego. Dejar reposar unos 10 minutos tapado y ya estará listo para servir. Buen provecho!!
