- Salpimentamos el pollo y le espolvoreamos tomillo
- Doramos el pollo y la panceta en una cazuela con aceite de oliva a fuego vivo
- Cuando esté dorado por los lados, no hace falta que esté cocido del todo, solo doradito, reservamos el pollo y la panceta en un plato
- Picamos la cebolla, ajo y guindilla y freímos en el aceite de la carne a fuego suave. Cortamos la calabaza y patata a cuadraditos y rallamos los tomates para retirar las pepitas. Una vez hecha la cebolla añadimos la patata y calabaza y freímos hasta que se doren un poco. Añadimos el tomate y el perejil picado y freímos unos minutos.
- Probamos de sal y rectificamos si falta, añadir el pollo y panceta, un poco de comino, pimienta, romero y una ramita de tomillo o sinó unas hojitas
- Cubrimos con agua caliente o caldo, removemos y probamos de sal, pimienta y comino al gusto. Dejamos cocer unos 50 minutos aproximadamente, tapado, dar una vuelta a la carne y verduras de vez en cuando y probar de sal, ya que la calabaza le da un punto dulce. Añadir un chorro de vino y dejar 5' + o -, que se evapore. Sacar del fuego y dejar reposar un poco, cuanto más repose más rico. Que aproveche!!
