- Precalentar el horno a 170º, calor arriba y abajo
- Lavar, secar y partir la calabaza a la mitad a lo largo. Quitar las pipas y hebras. Poner en una fuente apta para el horno, salpimentar y poner un chorrito de AOVE
- Meter al horno hasta que esté blanda, el tiempo depende del tamaño de la calabaza. Esta ha estado 20 minutos
- Mientras se hace la calabaza limpiar y picar el bimi, los troncos en trozos pequeños y los ramitos enteros. Ponemos a cocer en una cazuela con agua y sal durante 1 y 1/2 minutos. Pasamos a un bol con agua fría
- Escurrimos y reservamos
- Picamos muy pequeños la cebolla y el puerro, los ponemos a pochar en una sartén con AOVE a fuego bajo
- Picamos muy pequeños los pimientos y los añadimos a la sartén
- Dejamos pochar. Retiramos y reservamos
- Sacamos la calabaza del horno cuando esté blanda y dejamos enfriar
- Vamos preparando la salsa de yogurt al curry. Pelamos, picamos y machacamos el ajo
- Ponemos en un bol junto a los demás ingredientes y mezclamos bien. Reservamos en la nevera hasta que la usemos
- Vaciamos la calabaza con cuidado de no romper la piel. Picamos la pulpa y la añadimos a la sartén con la cebolla que estará templada, fuera del fuego

- Rellenamos la calabaza con la mezcla. Ponemos por encima queso rallado al gusto
- Subimos la temperatura del horno a 225º en función gratinar. Metemos la calabaza hasta que el queso esté dorado
- Sacamos del horno. En un plato o fuente de servir ponemos unas hojas de kale. Ponemos la calabaza y adornamos con los ramitos de bimi reservados.
- Aliñamos las hojas de kale con salsa de yogurt al curry y ponemos en la fuente un poco más de salsa
